Strawberries, raspberries, blueberries, porridge oats and vanilla Greek yoghurt. The qualities of a pudding with the calories of a healthy breakfast!
I can honestly say I have officially found my perfect breakfast! This beauty was created after a long search for a solution to my ‘I want to lose weight but can’t stop eating cake’ dilemma. No, that doesn’t mean I have been eating cake for breakfast (honest, I really haven’t), but the problem was more to do with cravings. I’d do so well sticking to my diet until about 3 or 4pm and then the sugar cravings would start, but with this healthy berry and Greek yoghurt parfait for breakfast, I already feel like I’ve had my pudding fix of the day and it’s not even 9am yet!
To make things even better, unlike a lot of healthy breakfasts, this one requires no cooking, very minimal preparation and barely any washing up! Just a couple of strawberries to chop and place the ingredients in the glass and it’s all ready to eat!
You could actually make it into a dessert by replacing the Greek yoghurt with whipped cream and the porridge oats for crushed digestives, but if you’ve come here looking for a healthy recipe then I apologise for being a bad influence.
So, if you’re like me and your sweet tooth keeps ruining the diet, this one is perfect for you! Let me know what you think in the comments below.
