Raspberry Pancakes Recipe

Knowing that I had some raspberry syrup leftover from my Raspberry and White Chocolate Cheesecake that I made the other week, I thought it’d be rude not to use it up. I had 30 days to use it after opening, and I hate seeing food go to waste.

Ok, you got me! Maybe you’re right, maybe that was just an excuse to have pancakes, what can I say? It’s been a while! Let’s face it, there has been a shortage of flour in recent months!

So that was the dessert type and the topping sorted, it just made sense to add the raspberries in the middle! And there’s nothing like a bit of food colouring to really make it look like you’ve planned thoroughly. 

Honestly, the thought process behind this dessert was as simple as that, but what a success! Even if I do say so myself! 

Here’s how I made these Raspberry Pancakes

What you’ll need to make these Raspberry Pancakes


Mixing bowl



One Egg Frying Pan

Fish Slice


  • 5oz plain flour
  • 2 eggs
  • 200 ml milk
  • 200g raspberries
  • pink food colouring gel
  • mint leaves for decoration

Method (makes 1 stack of 5)

To prepare, heat oil in the pan on a medium heat.

  1. Firstly, place flour and cocoa powder in a mixing bowl, and make a well in the middle.
  2. Secondly, beat two eggs and pour into the well of the flour.
  3. Whilst mixing with a hand whisk, pour the milk in with the flour and the eggs.
  4. Whisk until completely smooth.
  5. Pour in the raspberries and mix with the whisk. Some will get shredded with the whisk, this is fine.
  6. Use a ladle to pour the batter into the frying pan so that it fills the whole of the pan.
  7. Once you see all around the outside of the pancake batter is no longer a liquid, flip it over.
  8. Cook until both sides keep their shape.
  9. Repeat until all the batter has been used, piling the pancakes on top of each other as each comes out of the pan.
  10. Drizzle some raspberry syrup from side to side over the top. 
  11. Place 3 raspberries on the top with some mint in the middle as photographed, and a few raspberries on the side of the plate for decoration.
