What I use to make Chicken Fajitas – Recipe

Chicken Fajitas are one of my favourite meals to have at home. There are so many different ways to cook fajitas that I don’t often have them when I’m eating out, because it’s just never the same as when I have them at home, so I’m usually disappointed!

I have tested out many ways to make them, using all kinds of Fajita kits, sauce jars, and different ways of making them from scratch myself, but I’ve got to say, that Tesco Medium Fajita Kit has got to be my favourite ever!

Yes, I even prefer it to Old El Paso, sorry! Although to be fair, they do come in second place…

It’s so easy doing it this way, because the box literally has everything you need apart from the chicken and the peppers, and it’s a mega quick meal to make for week nights, if not for a weekend treat when you can’t be bothered to go to extreme lengths cooking but don’t fancy a takeaway!

Another plus side is the lack of equipment needed, meaning hardly any washing up…

The ingredients listed below come to £5.51 from Tesco. That’s £1.85 for the kit, 91p for the peppers and £2.75 for the chicken! (I buy the 950g chicken breasts at £5.50 which come in two containers for 2 days worth of dinners.)

The fajita kit states on the box that it serves 4 people, however, I feed myself, my husband, and my toddler with these ingredients, and have 3 wraps left over and some spices. I usually make lunch with the leftovers the next day. If I was to serve 4 adult portions, I would probably buy 2 boxes, but then again it does depend on what and how much you are serving the fajitas with.

I usually serve ours with some mixed salad and potato wedges.

I have simply listed the ingredients that I personally use for my wraps, but you can add what you like. Red onion would probably also be a pleasant touch, as would soured cream, guacamole or even grated cheese.

Also, if you’re not a fan of spicy food, Tesco also do a mild fajita kit for the same price. I like to have a bit of heat, but not too much.  I can’t understand how anybody enjoys food that’s so hot and spicy that your mouth is so burnt that you can’t even taste the food, but I know everyone’s different! The good thing about the medium kit, is you can do what I do, and add a small amount of the spices for a slight heat, or add more if you prefer it a little hotter. The choice is yours and there’s room for you to make it how you like it.

You don’t have to use chicken, you could use pork if you prefer, but chicken fajitas are the way to go in our house.

There is a recipe on the back of the box which is very easy to follow, which is similar, however has some slight differences to this version, this is simply how I myself like to make fajitas for my family and I.

Here’s how I made my Chicken Fajitas

What you’ll need to make these Chicken Fajitas

2 Chopping Boards

Wooden Spoon

1. Heat the oil in a wok on a medium heat and add the diced chicken breasts.

2. From the fajita kit box, take the sachet of seasoning, and sprinkle over the top of the chicken to coat. Stir in with a wooden spoon.

Tip –  I only use about 2 tsps from the sachet, to get a little bit of heat from the spice, but not too much. If you want yours very spicy, you can add more.

3. Fry off the chicken until cooked thoroughly, and white all the way though.

4. Add the strips of peppers (all three colours) and cook until the peppers soften. Keep stirring to avoid the ingredients sticking to the bottom of the pan.

5. Once your peppers are softened, add the contents of the sachet of salsa from the box to the pan and stir in. Cook until the sauce is fully heated throughout.

6. Place the tortilla wraps on a plate and microwave as indicated on the box.

7. Divide the filling between the tortilla wraps, and wrap up.

8. Serve with whatever sides you wish!
